Assyrtiko Natural White Dry Wine, 750ml – Ariousios
Variety
A wine produced from the exceptional Greek white grape variety Assyrtiko, cultivated in the mountainous areas of Chios.
Altitude: 250 – 350 meters
Harvest: First 10 days of September
Yield per hectare: 7,000 – 8,000 kg
Cultivation:
Organic fertilizers (manure) are used, and spraying is carried out four times per year with sulfur and copper. The vineyards are non-irrigated.
Vinification
The red winemaking method is applied (skin-contact technique).
Fermentation takes place with the grape skins remaining in the tank for about twenty days. This is followed by pressing up to 0.5 bar. No oenological additives (e.g., enzymes or yeasts) are added during vinification, and no cooling or filtration is applied during stabilization.
Contains no sulfites or other winemaking additives.
It is unfiltered, so the presence of sediment is normal and expected in natural wines produced using this method.
Note: Although labeled as a white wine, the “Assyrtiko” actually appears orange due to its fermentation on the skins (a method known as skin-contact). This is the reason behind its orange hue – not oxidation.
Food Pairing
This natural Assyrtiko pairs well with lemony meat dishes, lean fish, and light pasta dishes.
Storage
Store in a cool, humid, dark place, ideally on its side. Serve at approximately 12°C.
Tasting Notes
A cosmopolitan wine with a deep orange hue. Notes of honey and wild white blossoms from the mountainous regions of Chios stand out, while the signature acidity of the Assyrtiko variety enhances its unique character.
