Chios Vita Red Dry Wine produced from two rare Greek Aegean red grape varieties, Avgoustiatis and Ayiannitis, cultivated in limited quantities by a small number of winemakers—with impressive, high-quality results.
Altitude: 250–350 meters
Harvest: August 20–30
Yield per hectare: 800 kg
Vinification
Fermentation takes place in tanks using the cold maceration method.
Aging
The wine matures and softens in oak barrels in the naturally cool and humid cellar of Ariousios and continues to age in the bottle until opened.
Food Pairing
Pairs beautifully with red meats, game, pasta dishes, and aged yellow cheeses.
Storage
Store in a cool, shaded place to preserve its character and allow it to develop over time. Ideally, let it breathe for a few minutes before serving.
Tasting Notes
These rare grape varieties give the wine a velvety, soft texture. It has a deep red color, with wild herb aromas and flavors reflecting the terroir of Chios.
