Chios Natural Red Dry Wine 750ml
Variety
Chios Krassero, the unique indigenous variety that has been producing the famous “Ariousios wine” since ancient times, for which Chios was renowned across the known world.
Altitude: 250 to 350 meters
Harvest: September 20–30, from 30-40-year-old vines. The harvest is done manually in 18 kg crates.
Cultivation: Organic fertilizers (manure) are used, and spraying is done with sulfur and copper four times a year. The vines are not irrigated.
Yield per hectare: 700–800 kg
Winemaking
The winemaking process for this natural red dry wine starts with sun-drying the grapes for about a week. Fermentation occurs with the skins remaining in the tank for about 20 days. Then, pressing takes place at up to 0.5 bar. No enological additives (such as enzymes or yeasts) are used during fermentation, and no cooling or filtering procedures are applied during stabilization.
No sulfites or other enological materials are added.
The wine is not filtered, so it may have sediment, which is typical for wines made with this natural winemaking process.
Aging
It matures for 18 months in a naturally cool and humid cellar, in oak barrels approximately 6 years old.
Food Pairing
Best paired with meats in red sauces, as well as pasta dishes with spicy sauces.
Storage
The “Chios Krassero” variety matures and improves with age. It should be stored in a cool, humid place, protected from light and temperature fluctuations.
Tasting Notes
The wine has a deep purple color. Its flavors are enhanced if aerated for about 20 minutes before serving. The aromas and flavors you can discover include wild herbs from the mountainous area of Ammon, where the variety is grown, red fruits (cherry), and vanilla.
